Chocolate Chip Cookie Sandwich recipe.
What to do:
Preheat the oven to 180ºC or gas mark 4. Combine the butter and sugar in a bowl and cream until fluffy. Add the vanilla extract and eggs and beat in. In a separate bowl sift the flour, cocoa and baking powder together. Add the flour mixture to the creamed butter mixture a little at a time and mix well. Add the chocolate chips and fold into the mixture. Spoon the cookie dough onto a greased baking tray before placing in the preheat oven for 12 minutes or until cooked. Remove the cookies from the oven and place on a wire rack to cool. Whilst your cookies are cooling whip double cream. To make up your cookie sandwiches, place a spoonful of The Bay Tree's raspberry jam on the bottom of a cookie, add a dollop of whipped cream and top with another cookie. Enjoy!
